Lemon Crunch: A. 1/4 cup melted margarine 1 cup crushed ginger cookies mix these together & press into 2 8" round pans. B. 1 can sweatened condensed milk rind of 3 lemons (grated) 7 tablespoons of lemon juice mix together until thickens. Put in fridge C. 250 ml. of whipped cream fold into "B" above. Pour B and C into pans and spread evenly, put in freezer---can be served frozen. Note-"lemon crunch"- Mom thaws hers a little before she serves it. Enjoy! :)
